Jacks Black Bean Salad Recipe

Garbanzo Spinach and Feta Salad


  • 1 carton of Jack’s Quality Organic Low Sodium Garbanzo Beans, rinsed and drained
  • 2 tablespoons white balsamic vinegar, for marinating beans
  • 6-8 oz, baby spinach leaves
  • 4 oz. crumbled feta cheese


  •  2 tablespoons balsamic vinegar
  • 4 tablespoons extra virgin olive oil

Cooking Ingredients

  1. Combine Garbanzo Beans with 2 tbsp. white balsamic in small container with a lid, shake to coat the beans and marinate 3 hours in the fridge.
  2. For each portion, put 2 handfuls of spinach in a mixing bowl, drizzle 1.5 tbsp. of dressing and stir until spinach is well coated. Arrange spinach on serving plate, top with about 1/4 cup marinated garbanzos and 1 oz. crumbled feta.
