Recipe: Chef Kent Rathbun’s Roasted Garlic Hummus

Roasted Garlic Hummus from Summer Fancy Food Show

In case you missed us at the Summer Fancy Food Show in June, you missed out on some “fancy” food thanks to our friend Chef Kent Rathbun. But don’t worry, he was kind enough to allow us to share his recipe for his Roasted Garlic Hummus, using Jack’s Quality organic, low sodium garbanzo beans, with you.


  • 1/4 cup garlic cloves, peeled
  • 1 cup extra virgin olive oil
  • 4 cups Jack’s organic, low sodium garbanzo beans, drained
  • 1/4 cup Tahini Paste
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon paprika
  • 1 teaspoons curry powder
  • 1 teaspoon cumin, ground
  • 1 tablespoon kosher salt
  • 2 tablespoons parsley leaves, picked and chopped


  1. In a sauté pan, add garlic cloves and olive oil and slowly begin to sauté garlic until cloves are golden brown and softened.
  2. Separate 1/4 cup of gariic-olive oil for later use.
  3. In a VitaMix blender, add garlic, olive oil, 3 cups of chickpeas retaining 1 cup for later use, tahini paste lemon zest, lemon juice, paprika, curry powder, ground cumin and salt. Puree until smooth.
  4. Transfer to a serving bowl and garnish with chopped parsley, remaining 1/4 cup olive oil and remaining chickpeas.
