Roasted Garlic Hummus


  • 1⁄4 cup garlic cloves, peeled
  • 1 cup extra virgin olive oil
  • 4 cups Jack’s Quality Garbanzo Beans
  • 1⁄4 cup tahini paste
  • 2 t lemon zest
  • 2 T lemon juice
  • 1 t paprika
  • 1 t curry powder
  • 1 t cumin
  • 1 T salt
  • 2 T parsley, chopped


  • In a sauté pan, add garlic cloves and olive oil and slowly begin to sauté garlic until cloves are golden brown and softened.
  • Separate 1/4 cup of garlic-olive oil for later use.
  • In a VitaMix blender, add garlic, olive oil, 3 cups of chickpeas retaining 1 cup for later use, tahini paste, lemon zest, lemon juice, paprika, curry powder, ground cumin and salt. Puree until smooth.
  • Transfer to a serving bowl and garnish with chopped parsley, remaining 1/4 cup olive oil and remaining chickpeas.
  • Note: Garnish with crumbled feta cheese, black olives, and diced tomatoes.
